The Chef Paolo Castrignano revisits with a modern twist traditional cuisine from the Lazio region. The products are selected with respect to season and freshness,  preferably organic and at Km 0, like the ones from the Bassetti estate.

Burger day is a fixed appointment which takes place every Saturday. It is highly appreciated among burger lovers. The recipe is prepared with selected Italian meat, fresh bread prepared by the Molto staff and a variety  of ingredients to finish the dish at your choice.

The Rotisserie

The Rotisserie

The Rotisserie is the absolute protagonist of the open-plan kitchen, where ancient flavour recipes are prepared with selected Italian meats such as chicken, pig, duck, pigeon and rabbit. Dishes are served accompanied by vegetables from Molto’s Garden, homemade bread and sauces prepared by the kitchen with fresh ingredients.

Molto’s menu always offers proposals of regional cuisine, prepared according to traditional recipes, faithfully or with some small creative reinterpretation. The raw materials come from Molto’s Garden or from local suppliers to ensure freshness and quality, and are selected depending on the season and availability on the territory.

Fresh Pasta

Pasta, the base of the Italian tradition, is one of the key ingredients of Molto’s cuisine. Our fresh pasta is worked by hand every day to create the finest first courses,  and depending on the menu recipes is prepared in different varieties: water and flour, egg, short, long and stuffed. Not to be missed the water and flour pasta in carbonara style”.

The Bread

Bread is daily prepared with the best quality flours and respecting the leavening time required by traditional recipes. Delicate buns, white pizza and breadsticks are always accompanied by creative proposals that vary periodically. Even the sandwiches for Molto’s Burger Day burgers are prepared by our cuisine.
